- Soak the pitted dates in warm water for 5-10 minutes until softened. Drain and set aside.
- Blend together rolled oats, soaked dates, almond butter, ground flaxseed, honey, maple syrup, melted coconut oil, ground cinnamon, and vanilla extract until crumbly.
- Prepare a muffin tin by lining with paper liners or greasing it. Press 1 tablespoon of oat mixture into each cup to form the base.
- Whisk together Greek yogurt and remaining vanilla extract until smooth. Spoon over the oat base.
- Add sliced strawberries and blueberries on top of the yogurt layer. Optionally, add sprinkles.
- Freeze for 2-3 hours until solid. Remove bites from the tin and store in an airtight container with parchment layers.
- Let bites sit at room temperature for 1-2 minutes before enjoying for a creamier texture.
