  • 2 cups Rolled Oats Ensure they're certified gluten-free
  • 1 cup Pitted Dates Soak in warm water to soften
  • 1/2 cup Almond Butter Can substitute with peanut butter
  • 1 tablespoon Ground Flaxseed Chia seeds can be used as a substitute
For Sweetness
  • 1/4 cup Honey Maple syrup can be used for vegan
  • 1/4 cup Maple Syrup Adjust based on yogurt choice
For Creaminess
  • 1/4 cup Coconut Oil Melted and cooled, or use olive oil
  • 2 cups Greek Yogurt Plain or flavored, or use coconut yogurt
For Flavor
  • 1 teaspoon Ground Cinnamon Optional
  • 2 teaspoons Vanilla Extract Pure extract is recommended
For Decoration
  • 1/2 cup Sprinkles Optional
  • 1 cup Sliced Strawberries Substitute with your favorite berries
  • 1 cup Blueberries Substitute with your favorite berries

Method
 

Step-by-Step Instructions
  1. Soak the pitted dates in warm water for 5-10 minutes until softened. Drain and set aside.
  2. Blend together rolled oats, soaked dates, almond butter, ground flaxseed, honey, maple syrup, melted coconut oil, ground cinnamon, and vanilla extract until crumbly.
  3. Prepare a muffin tin by lining with paper liners or greasing it. Press 1 tablespoon of oat mixture into each cup to form the base.
  4. Whisk together Greek yogurt and remaining vanilla extract until smooth. Spoon over the oat base.
  5. Add sliced strawberries and blueberries on top of the yogurt layer. Optionally, add sprinkles.
  6. Freeze for 2-3 hours until solid. Remove bites from the tin and store in an airtight container with parchment layers.
  7. Let bites sit at room temperature for 1-2 minutes before enjoying for a creamier texture.

Notes

Pack the oat base firmly in the tin to prevent crumbling. Adjust the sweetness to your taste with honey or maple syrup.
