  2. Peel the shallots and slice them into ½-inch pieces.
  3. Combine whole garlic cloves, chopped shallots, fresh rosemary, and fresh thyme in a casserole dish.
  4. Pour avocado oil over the garlic and shallot mixture until completely submerged.
  5. Place the casserole dish in the oven and bake for approximately 2.5 hours.
  6. Allow the Garlic Confit to cool for about 30 minutes after baking.
  7. Transfer the garlic and shallots into a clean mason jar, packing tightly.
