For the Meatloaf
  • 1 pound Ground Chicken Alternatively, ground turkey or lean pork can be used.
  • 1 cup Parmesan Cheese Romano cheese is a great substitute.
  • 1 cup Panko Breadcrumbs Regular breadcrumbs can be used as an alternative.
  • 1 large Eggs Essential for binding the meatloaf.
  • 3 cloves Minced Garlic Adjust to taste.
  • 1 teaspoon Garlic Powder Use less if sensitive to garlic.
  • 1 teaspoon Onion Powder Optional.
  • 1 teaspoon Dried Basil Fresh herbs can be substituted.
  • 1 teaspoon Dried Parsley Fresh parsley is preferable if available.
  • 1 teaspoon Salt Adjust based on dietary preferences.
  • 1 teaspoon Black Pepper Adjust to taste.
  • 1/2 cup Whole Milk Substitute with plant-based milk if needed.
For the Glaze
  • 4 tablespoons Unsalted Butter Use unsalted to control saltiness.
  • 1/4 cup Additional Parmesan For glaze.
  • 2 tablespoons Fresh Parsley For garnish.

Method
 

Cooking Instructions
  1. Preheat the oven to 190°C (375°F). Prepare a baking sheet by lining it with parchment paper or greasing a loaf pan.
  2. In a mixing bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, parsley, salt, black pepper, and whole milk. Mix gently.
  3. Shape the mixture into a loaf and place it in the prepared loaf pan or on the baking sheet.
  4. Bake for 40-45 minutes until the internal temperature reaches 74°C (165°F) and the top is lightly browned.
  5. Prepare the glaze by melting the unsalted butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant. Stir in additional Parmesan and parsley.
  6. Brush the glaze over the meatloaf and return it to the oven for an additional 5-7 minutes.
  7. Let the meatloaf rest for about 5 minutes before slicing. Garnish with additional parsley.
