Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a large baking sheet by lightly oiling it.
  2. Rinse and halve your red potatoes, place them in a single layer on the baking sheet, cut side down.
  3. Combine the halved potatoes with olive oil, garlic, thyme, oregano, basil, salt, and pepper in a mixing bowl.
  4. Transfer the baking sheet to the oven and roast the potatoes for 25–30 minutes, stirring halfway through.
  5. Stir in the unsalted butter and sprinkle Parmesan cheese over the hot potatoes before serving.
  6. Garnish with chopped parsley if desired and enjoy!
