- Place shrimp in a mixing bowl. Season with salt, black pepper, sweet paprika, and garlic powder. Toss well and let marinate.
- Mince the garlic cloves and dice the yellow onion to have everything ready for cooking.
- Heat olive oil and butter in a skillet over medium-high heat. Sear shrimp for about 1 minute on each side until pink. Remove from skillet.
- In the same skillet, sauté minced garlic and diced onion over medium heat for about 3 minutes until translucent.
- Pour in ¾ of the coconut milk. Whisk the remaining milk with cornstarch, add to skillet with fish sauce, honey, and lime juice. Simmer for about 2 minutes until thickened.
- Return the shrimp to the skillet, tossing them in the sauce until well-coated. Simmer for another minute.
- Serve immediately, garnished with cilantro, chili flakes, and freshly cracked black pepper. Best served over rice, noodles, or with crusty bread.
