  • 2 cups baby bok choy can substitute with spinach
  • 2 stalks scallions or chives as an alternative
  • 4 cloves garlic minced
  • 1 medium jalapeño optional for heat
  • 1 cup frozen peas can use edamame
  • 1 tablespoon fresh ginger finely chopped
  • 3 tablespoons soy sauce low-sodium for healthier option
  • 1 tablespoon sesame oil can use more canola oil
  • 1/2 teaspoon white pepper optional
  • 1/2 cup fresh basil or cilantro

Method
 

Cooking Instructions
  1. Gather and chop all ingredients for a seamless cooking experience.
  2. Heat a large wok or skillet and add 2 tablespoons of oil. Add chopped mushrooms and season with salt and pepper. Cook for 5-6 minutes until tender.
  3. In the same skillet, add another tablespoon of oil, bok choy, scallions, garlic, and jalapeño. Stir-fry for 2-3 minutes until bok choy is wilted and garlic is aromatic.
  4. Pour in another tablespoon of oil, then add the jasmine rice. Cook for 4-5 minutes, breaking apart clumps and allowing rice to toast.
  5. Add frozen peas, ginger, soy sauce, sesame oil, and white pepper to the rice. Toss for 1-2 minutes until warmed through.
  6. Mix in sautéed mushrooms and bok choy, along with fresh basil. Stir until basil wilts. Serve hot.
