Ingredients

For the Crumb Topping
  • 1 cup granulated sugar Regular granulated sugar can replace brown sugar for a lighter taste.
  • 1/2 cup brown sugar Light or dark brown sugar works well; dark yields a richer taste.
  • 1 cup flour Ensure fresh flour for best results; gluten-free flour can be used.
  • 1 teaspoon cinnamon Pumpkin pie spice or nutmeg can be used for different flavor.
  • 1/2 teaspoon salt Fine sea salt is preferable; avoid table salt to minimize bitterness.
  • 1/2 cup butter (softened) Margarine can be used but the flavor may differ.
For the Cookie Base
  • 1 teaspoon vanilla extract Use pure vanilla extract for best taste; imitation is budget-friendly.
  • 1 large egg 1/4 cup unsweetened applesauce can be a vegan alternative.
  • 1 yolk egg yolk
  • 1 cup Biscoff spread A similar cookie butter can be used if Biscoff is unavailable.
For the Topping
  • 2 cups mini marshmallows Marshmallow cream can be used but texture may change.

Equipment

  • 8x8 inch baking pan
  • mixing bowls
  • spatula

Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine sugar, brown sugar, flour, cinnamon, and salt. Cut in the softened butter until it resembles coarse crumbs. Set aside.
  2. Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  3. In a medium bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Blend in the egg, egg yolk, and vanilla extract until fully combined.
  4. Gradually mix in the dry ingredients until they form a thick dough.
  5. Transfer the cookie dough to the prepared baking pan and press it down evenly. Bake for about 12 minutes.
  6. Spread the melted Biscoff over the warm cookie base, then add a layer of mini marshmallows.
  7. Sprinkle the crumb topping over the marshmallow layer and return to the oven for 12-15 minutes.
  8. Let the Gooey Biscoff Crumb Bars cool completely in the pan before slicing and serving.
