  • 1 tablespoon Basil or oregano as a substitute
  • 1 tablespoon Parsley or cilantro for substitution
  • 2 cloves Garlic fresh recommended, garlic powder can be used
  • 2 tablespoons Lemon Juice lime juice can be substituted
  • 1 teaspoon Salt sea salt or kosher salt can be used

  • 1 pound Chicken (boneless skinless thighs) or chicken breast
  • 8 ounces Mushrooms zucchini or bell peppers for vegetarian option
  • 1 cup Cherry Tomatoes other small tomatoes can substitute
  • 2 number Green Onions red onion can be used for a stronger flavor

Method
 

Preparation
  1. In a large bowl or Ziploc bag, combine olive oil, chopped basil, parsley, minced garlic, lemon juice, and salt. Stir or seal the bag to mix thoroughly.
  2. Add the chicken pieces to the marinade, ensuring each is fully coated. Refrigerate for at least 30 minutes to 2 hours.
  3. Preheat your grill or campfire to medium-high heat, approximately 375°F to 400°F.
  4. Skewer the marinated chicken and chosen vegetables onto metal or soaked wooden skewers, leaving space between items.
  5. Grill the skewers, turning occasionally, for about 10 minutes until chicken is golden brown and reaches 165°F.
  6. Remove from grill and let rest for a few minutes before serving.
