  • 1 large Bell Pepper (orange) Any color bell pepper is acceptable.
  • 1 cup Tomatoes Cherry tomatoes can substitute for sweetness.
For the Taco Base
  • 8 pieces Flour or Corn Tortillas Lettuce wraps can be a low-carb option.

Steps to Prepare
  1. Prep the creamy cabbage slaw by combining shredded red cabbage, lime juice, olive oil, green onions, cilantro, and kosher salt. Refrigerate overnight.
  2. Create the chicken marinade by mixing orange juice, lemon juice, lime juice, olive oil, garlic, oregano, cumin, and black pepper. Marinate the chicken for at least 30 minutes.
  3. Preheat the grill to medium-high heat at 400°F. Grill the marinated chicken for 5-7 minutes per side until it reaches 165°F. Let it rest for 10 minutes before slicing.
  4. Warm the tortillas on the grill for about 30 seconds on each side.
  5. Assemble the tacos with grilled chicken, creamy cabbage slaw, and fresh mango salsa. Add any additional toppings as desired.
