Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the peach preserves, low-sodium soy sauce, chili garlic sauce, olive oil, lemon juice, kosher salt, and freshly ground black pepper. Whisk until smooth.
  2. Place the chicken in a zip-top bag and pour three-quarters of the marinade over it. Seal and refrigerate for at least one hour.
  3. Preheat your grill to medium-high heat (375°F to 450°F). Set up the grill for indirect cooking.
  4. Remove chicken from the marinade, discard the marinade, and grill for about 10 minutes, turning occasionally until cooked through.
  5. Let chicken rest for a few minutes after grilling. Slice, drizzle remaining marinade, garnish, and serve with sides.
