Method
 

Step-by-Step Instructions
  1. In a large zip-top bag, combine lime zest, lime juice, olive oil, honey, fresh cilantro, kosher salt, and black pepper. Add the chicken, seal, and shake to coat. Marinate for at least 1 hour, or overnight.
  2. Preheat your grill to medium-high heat, around 375–450°F (190–232°C). Lightly oil the grates with a paper towel soaked in olive oil.
  3. Remove the chicken from the marinade and discard it. Place the chicken on the grill grates, close the lid, and grill for about 5 minutes. Flip and cook for an additional 4-5 minutes until the internal temperature reaches 165°F (75°C).
  4. Remove the chicken from the grill, let it rest for a few minutes, and garnish with additional fresh cilantro and lime wedges before serving.
