- In a large mixing bowl, whisk together pineapple juice, lime juice, soy sauce, ginger, garlic, honey, and cornstarch until smooth.
- Add chicken thighs to the marinade, ensuring coating. Cover and refrigerate for 2-12 hours.

- Remove chicken from marinade, reserve marinade. Grill chicken for 6-7 minutes per side until cooked through.
- Grill fresh pineapple for 3-5 minutes until charred.
- Simmer reserved marinade in a saucepan over medium heat for about 5 minutes until thickened.
- Chop grilled pineapple, combine with cubed tomatoes, jalapeño, cilantro, lime juice, salt, and pepper.
- Divide rice into bowls, top with chicken, drizzle with thickened marinade, and spoon salsa over the top.
