- In a medium bowl, whisk together mayonnaise, minced garlic, lemon zest, lemon juice, kosher salt, cracked black pepper, smoked paprika, and honey until the mixture is smooth and creamy. Cover and refrigerate.
- Rinse and pat dry the scallops. In a separate bowl, combine olive oil, kosher salt, cracked black pepper, and smoked paprika. Coat the scallops in the marinade and let them marinate for 15 minutes.
- Preheat your grill to high heat, around 450°F to 500°F. Ensure the grill grates are clean and lightly oiled.
- Thread the marinated scallops onto skewers and grill for 2-3 minutes per side, or until opaque with grill marks.
- On a platter, arrange arugula and place grilled scallops on top. Serve immediately with chilled lemon aioli.
