Ingredients
  

For the Casserole
  • 1 pound Ground Beef opt for lean beef
  • 1 medium Onion chopped; substitutes include shallots or leeks
  • 3 cloves Garlic minced; fresh is best
  • 1.25 cups Enchilada Sauce store-bought or homemade
  • 1 can Black Beans drained and rinsed; alternatives include pinto beans or lentils
  • 1 can Diced Green Chiles mild spice; jalapeños can be used for heat
  • 12 corn tortillas Corn Tortillas gluten-free option available
  • 2 cups Shredded Cheddar Cheese sharp cheddar enhances flavor
  • 2 cups Shredded Monterey Jack Cheese substitutes include mozzarella or Colby Jack
For the Toppings
  • 1 medium Avocado or guacamole as substitute
  • 2 tablespoons Lemon Juice lime juice can substitute
  • 1 medium Diced Tomato alternatives include cherry tomatoes or tomatillos
  • 0.25 cup Chopped Cilantro optional
  • 1 medium Minced Jalapeño add sparingly

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13-inch casserole dish by spraying it with nonstick cooking spray.
  2. In a large skillet over medium heat, add the ground beef and chopped onion, and cook until the beef is browned and the onions are soft, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 additional minute.
  4. Stir in 1 1/4 cups of enchilada sauce, followed by the black beans and diced green chiles, and cook for another 1-2 minutes.
  5. Pour 2 tablespoons of enchilada sauce onto the bottom of the casserole dish and start layering with a fourth of the tortillas.
  6. Add one-third of the beef mixture and sprinkle a quarter of both cheddar and Monterey Jack cheeses.
  7. Repeat the layering process two more times, finishing with the remaining tortillas, additional enchilada sauce, and the last of the cheese.
  8. Cover the casserole with aluminum foil and bake for 30-35 minutes. Remove the foil and bake for an additional 5 minutes.
  9. Let the casserole rest for 5-10 minutes and then garnish with diced avocado, fresh tomato, cilantro, and minced jalapeño.
