Step-by-Step Instructions
  1. Season the chicken thighs with salt and pepper on both sides, allowing them to rest for a few minutes.
  2. Heat 2 tablespoons of olive oil or butter in a skillet over medium-high heat, then add the chicken thighs skin-side down for about 5-7 minutes.
  3. Flip the thighs and cook for an additional 3-4 minutes, then remove from the pan and set aside.
  4. In the same pan, add sliced onions and caramelize for approximately 5 minutes until golden.
  5. Stir in minced garlic and sauté for 30 seconds until fragrant.
  6. Add thin apple slices along with thyme and rosemary, cooking for 2-3 minutes.
  7. Pour in 1 cup of apple cider and 1/2 cup of chicken broth, scraping any browned bits from the pan.
  8. Bring to a simmer, then nestle the chicken back in, skin-side up, and cover.
  9. Let it simmer for 25-30 minutes or until the chicken is fully cooked and tender.
  10. Remove the chicken, stir in 1 tablespoon of Dijon mustard and 1/2 cup of heavy cream into the sauce, and simmer until thickened.
  11. Return the chicken to the pan briefly to warm, then serve garnished with fresh herbs.
