Method
 

Step-by-Step Instructions
  1. In a blender, combine Hatch green chiles, minced garlic, fresh cilantro, salt, and ancho chili seasoning. Blend until smooth.
  2. Place the pork loin in the slow cooker and pour the chili verde sauce over it. Cook on low for approximately 8 hours.
  3. After cooking, shred the pork directly in the cooker using two forks, mixing with the sauce.
  4. Warm the tortillas in a skillet or microwave until pliable, about 30 seconds on each side.
  5. Lay a tortilla flat and fill with shredded pork mixture and toppings. Roll tightly and enjoy!
  6. Serve warm on a platter, or wrap in foil to keep warm.
