Ingredients
  

For the Meatballs
  • 1 lb Ground Chicken Can substitute with ground turkey

  • 1/4 cup Fresh Parsley Minced
  • 1/4 cup Fresh Basil Minced
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 large Egg Can substitute with flax egg for vegan option
  • 2 tbsp Olive Oil Can substitute with avocado oil
For the Bowl
  • 1 cup Quinoa Can substitute with brown rice or cauliflower rice
  • 4 cups Mixed Greens Can substitute with spinach or arugula
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Cucumber Sliced
  • 1/4 cup Balsamic Vinaigrette Can substitute with homemade vinaigrette

Method
 

Directions
  1. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced parsley, minced basil, garlic powder, onion powder, salt, black pepper, and egg.
  2. Once mixed, take a portion of the mixture and roll it into uniform balls, about the size of a golf ball.
  3. Preheat your oven to 400°F (200°C) and drizzle olive oil over the meatballs. Bake for 20-25 minutes or until golden brown.
  4. Prepare quinoa according to package instructions, then fluff with a fork and set aside.
  5. In a bowl, combine cooked quinoa, mixed greens, halved cherry tomatoes, and sliced cucumber. Drizzle with balsamic vinaigrette.
  6. To serve, place a scoop of the quinoa salad in each bowl and top with several baked meatballs.
