For the Topping
  • 2 tbsp Melted Butter Opt for dairy-free options if preferred.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F towards the end of the second rise.
  2. In a stand mixer bowl, mix yellow cornmeal, salt, butter, and molasses. Pour in boiling water and mix until combined. Let it cool until lukewarm (approx. 15 minutes).
  3. Incorporate all-purpose flour, whole wheat flour, nonfat dry milk powder, and instant yeast. Mix on low speed until combined, then cover and let rest for 20 minutes.
  4. Knead the dough using a dough hook for about 7 minutes until smooth and elastic.
  5. Lightly oil the surface, cover the bowl, and allow to rise in a warm place for ~1 hour or until doubled in size.
  6. Punch the dough down, divide into 6 pieces, and shape each into a smooth roll. Place in a buttered skillet.
  7. Cover and let rolls rise for another 90 minutes until puffy.
  8. Bake rolls in the preheated oven for approximately 35 minutes until golden brown.
  9. Brush tops with melted butter and allow to cool slightly before serving.
