Preparation Steps
- Preheat your oven to 350°F towards the end of the second rise.
- In a stand mixer bowl, mix yellow cornmeal, salt, butter, and molasses. Pour in boiling water and mix until combined. Let it cool until lukewarm (approx. 15 minutes).
- Incorporate all-purpose flour, whole wheat flour, nonfat dry milk powder, and instant yeast. Mix on low speed until combined, then cover and let rest for 20 minutes.
- Knead the dough using a dough hook for about 7 minutes until smooth and elastic.
- Lightly oil the surface, cover the bowl, and allow to rise in a warm place for ~1 hour or until doubled in size.
- Punch the dough down, divide into 6 pieces, and shape each into a smooth roll. Place in a buttered skillet.
- Cover and let rolls rise for another 90 minutes until puffy.
- Bake rolls in the preheated oven for approximately 35 minutes until golden brown.
- Brush tops with melted butter and allow to cool slightly before serving.
