For the Wrap
  • 1 cup Vermicelli Noodles Can be replaced with angel hair or ramen noodles.
  • 8 leaves Lettuce Leaves Green leaf, bibb, or iceberg are all great choices.
For Garnish
  • Sesame Seeds Optional, for added crunch.

Step-by-Step Instructions
  1. Heat a non-stick skillet over medium-high heat for about 2 minutes. Drizzle in olive oil and add cubed chicken. Sauté for 5-7 minutes until golden brown and cooked through.
  2. Add shredded carrots and chopped green onions to the skillet. Stir and cook for an additional 3-4 minutes until carrots soften.
  3. In a small bowl, whisk together minced garlic, soy sauce, honey, and Sriracha. Pour over chicken and vegetables.
  4. Cover and let simmer for 15-20 minutes, stirring occasionally until chicken is tender and flavors meld.
  5. Prepare vermicelli noodles according to package instructions, typically 4-6 minutes in boiling water. Drain and set aside.
  6. If desired, thicken the sauce with cornstarch mixed with water, cooking for an additional 5 minutes until thick.
  7. Fold cooked vermicelli into chicken mixture, then spoon into lettuce leaves for wraps. Garnish with sesame seeds if desired.
