Method
 

Strawberry Syrup
  1. In a saucepan, combine fresh strawberries, filtered water, and granulated sugar over medium heat. Stir gently until the sugar dissolves, then bring the mixture to a low boil for about 1 minute. Reduce heat and let it simmer for 20 minutes, mashing the strawberries as they soften.
Strain the Syrup
  1. Remove the strawberry mixture from heat and let it cool for 5-10 minutes. Strain through a fine mesh sieve into a bowl, pressing solids to extract as much liquid as possible.
Prepare Cold Foam
  1. In a separate glass, combine heavy whipping cream, pure maple syrup, and a splash of vanilla extract. Whisk until thickened and forms soft peaks, about 2-3 minutes.
Whisk the Matcha
  1. In a small mixing bowl, add matcha powder and pour in hot water. Whisk vigorously until fully dissolved and smooth, around 1-2 minutes.
Assemble the Latte
  1. Fill a serving glass with ice cubes. Pour in homemade strawberry syrup, followed by whisked matcha, then add non-dairy milk to complete the drink.
Finish with Cold Foam
  1. Top the latte generously with the prepared cold foam. Gently stir to blend or leave it on top for an appealing finish.
