- In a mixing bowl, combine the ground beef with soy sauce, gochujang paste, brown sugar, minced garlic, and grated ginger. Mix gently and let marinate for 10–15 minutes.
- Divide the marinated beef mixture into equal portions and shape each into a patty, pressing a dimple in the center.
- Preheat a grill pan or skillet over high heat. Cook patties for 4–5 minutes on one side until caramelized, then flip and cook for another 4–5 minutes.
- Mix mayonnaise with additional gochujang in a small bowl for the mayo. Adjust according to heat preference.
- Toast the burger buns and assemble by placing a patty on each, spreading gochujang mayo, and adding fresh vegetables.
