Step‑by‑Step Instructions
  1. In a large skillet, add 2 tablespoons of avocado oil and heat over medium-high heat until shimmering, about 1–2 minutes.
  2. Add the diced sweet potatoes to the skillet in a single layer and cover with a lid. Cook for approximately 6–7 minutes, stirring occasionally, until tender but slightly firm and just starting to brown.
  3. Stir in 1 can of black beans, 1/2 cup of salsa, 1 teaspoon of chili powder, 1 teaspoon of cumin, and a pinch of salt. Cook for an additional 3–5 minutes until heated through.
  4. In another skillet, gently warm a whole wheat tortilla over medium heat for about 30 seconds on each side.
  5. On one half of the warmed tortilla, layer 1/4 cup of cheddar cheese, followed by 1 cup of the sweet potato and black bean mixture. Sprinkle another 1/4 cup of cheese on top.
  6. Fold the tortilla over the filling and return it to the skillet. Cook for about 2 minutes until the bottom is golden brown and crispy.
  7. Carefully flip the quesadilla and cook for another 2–3 minutes until the other side is crisp and golden.
