Step‑by‑Step Instructions
- In a large skillet, add 2 tablespoons of avocado oil and heat over medium-high heat until shimmering, about 1–2 minutes.
- Add the diced sweet potatoes to the skillet in a single layer and cover with a lid. Cook for approximately 6–7 minutes, stirring occasionally, until tender but slightly firm and just starting to brown.
- Stir in 1 can of black beans, 1/2 cup of salsa, 1 teaspoon of chili powder, 1 teaspoon of cumin, and a pinch of salt. Cook for an additional 3–5 minutes until heated through.
- In another skillet, gently warm a whole wheat tortilla over medium heat for about 30 seconds on each side.
- On one half of the warmed tortilla, layer 1/4 cup of cheddar cheese, followed by 1 cup of the sweet potato and black bean mixture. Sprinkle another 1/4 cup of cheese on top.
- Fold the tortilla over the filling and return it to the skillet. Cook for about 2 minutes until the bottom is golden brown and crispy.
- Carefully flip the quesadilla and cook for another 2–3 minutes until the other side is crisp and golden.
- Remove the quesadilla from the skillet and let it cool for a minute before slicing it into triangles. Serve warm with your favorite toppings.

Notes
Ensure sweet potato pieces are cut uniformly for even cooking. Consider adding extra veggies for more flavor and nutrition.
