Dough Preparation
- In a large bowl, combine all-purpose flour, active dry yeast, and fine sea salt, mixing well. In a separate measuring cup, combine warm water and extra-virgin olive oil. Pour this mixture into the dry ingredients, stirring until a very soft, sticky dough forms.
First Rise
- Cover the bowl tightly with plastic wrap and let the dough rest at room temperature for 30 minutes. Transfer to the refrigerator and chill for at least 12 hours.
Baking Preparation
- Preheat your oven to 425°F (220°C). Grease a 9x13-inch pan generously with olive oil. Flip the chilled dough onto the oiled pan, stretching it towards the corners.
Second Rise
- Cover the dough with a clean kitchen towel and allow it to rise at room temperature for another 30 to 45 minutes.
Topping & Baking
- Dimple the surface of the dough gently. Sprinkle grated mozzarella cheese on top, followed by a layer of jarred pizza sauce and your favorite toppings.
Final Bake
- Bake for approximately 30 minutes, looking for a golden brown color on the edges and a bubbly cheese topping.
Cooling
- Remove the pan from the oven and let the focaccia pizza cool for a few minutes before slicing.
