Ingredients
  

For the Curry Base
  • 3-4 lbs organic chicken, skin removed drumsticks and thighs work best
  • 1-2 Tbsps browning sauce optional
  • 2-3 Tbsps Jamaican green seasoning can substitute with all-purpose seasoning
  • 2 Tbsps Jamaican curry powder plus 2.5 Tbsps for the sauce
  • 1 tsp sea salt
  • ½ tsp smoked paprika
For the Creamy Sauce
  • 4 Tbsps extra virgin olive oil
  • 2 Tbsps organic brown sugar can reduce or omit
  • 1 can (14 oz) coconut milk use full-fat for richness
  • 2 medium potatoes, peeled and cubed can substitute with sweet potatoes
  • 2 medium carrots, peeled and chopped
  • 1 medium bell pepper, cored and chopped
For the Spice and Flavor
  • 3 cloves garlic, minced
  • 2 tsps fresh ginger, minced or ½ tsp ground
  • 1-3 scotch bonnet peppers adjust to taste
  • 2 green onions, lightly crushed or chopped
  • 2 sprigs fresh thyme
  • 1 cup chicken stock low-sodium
  • 1 Tbsp Jamaican pepper sauce
  • 1 tsp ground allspice

Method
 

Preparation
  1. Marinate the chicken by mixing browning sauce, Jamaican green seasoning, sea salt, smoked paprika, and Jamaican curry powder in a ziplock bag.
  2. Brown the chicken in a skillet with olive oil and brown sugar, searing for 3-4 minutes on each side.
  3. Toast additional Jamaican curry powder in the same skillet for 2-3 minutes.
  4. Make the curry sauce by sautéing garlic, ginger, peppers, carrots, and bell pepper, then adding spices, coconut milk, chicken stock, and pepper sauce.
  5. Combine the browned chicken with the sauce, potatoes, and thyme, then simmer for 20-25 minutes.
  6. Serve with rice or fried plantains, garnished with green onions.

Notes
