- Marinate the chicken by mixing browning sauce, Jamaican green seasoning, sea salt, smoked paprika, and Jamaican curry powder in a ziplock bag.

- Make the curry sauce by sautéing garlic, ginger, peppers, carrots, and bell pepper, then adding spices, coconut milk, chicken stock, and pepper sauce.
- Combine the browned chicken with the sauce, potatoes, and thyme, then simmer for 20-25 minutes.
- Serve with rice or fried plantains, garnished with green onions.
