- Preheat your oven to 350°F (175°C).
- In a large skillet over medium-high heat, add oil and then the frozen cauliflower rice. Sauté for 5-7 minutes until golden and slightly crispy. Transfer to a greased casserole dish.
- In the same skillet, add ground beef, chopped red bell pepper, and white onion. Cook for 8-10 minutes until beef is browned and vegetables are tender. Drain excess fat.
- Reduce heat to medium-low, add taco seasoning, tomato paste, and water to the beef mixture. Cook for an additional 3-5 minutes until liquid is absorbed.
- Pour the seasoned beef mixture over the cauliflower rice, smoothing it out. Top with shredded cheese.
- Bake for 10-15 minutes until the cheese is bubbly and golden brown.
- Spread sour cream over the top and customize with additional toppings like lettuce or tomatoes. Serve warm.
