Ingredients
  

Casserole Base
  • 2-3 Tablespoons Oil Olive oil or avocado oil
  • 1 package Frozen Cauliflower Rice Fresh cauliflower can be used if preferred
Filling
  • 2 lbs Ground Beef Can substitute with ground turkey or chicken
  • 1 small Red Bell Pepper, chopped Can substitute with green bell pepper
  • 1 small White Onion, chopped Yellow onion or shallot can be used
  • 4 Tablespoons Taco Seasoning Store-bought or homemade
  • 1 Tablespoon Tomato Paste Salsa can be a substitute
  • 1/2 Cup Water Broth can enhance flavor
Topping
  • 3 Cups Shredded Colby/Jack Cheese Can substitute with cheddar or a Mexican blend
  • 1 Cup Sour Cream Greek yogurt can be a substitute
Customizing
  • Toppings Chopped lettuce, diced tomatoes, sliced black olives, fresh avocado, guacamole, cilantro, sliced jalapeños, your favorite salsa or hot sauce

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, add oil and then the frozen cauliflower rice. Sauté for 5-7 minutes until golden and slightly crispy. Transfer to a greased casserole dish.
  3. In the same skillet, add ground beef, chopped red bell pepper, and white onion. Cook for 8-10 minutes until beef is browned and vegetables are tender. Drain excess fat.
  4. Reduce heat to medium-low, add taco seasoning, tomato paste, and water to the beef mixture. Cook for an additional 3-5 minutes until liquid is absorbed.
  5. Pour the seasoned beef mixture over the cauliflower rice, smoothing it out. Top with shredded cheese.
  6. Bake for 10-15 minutes until the cheese is bubbly and golden brown.
  7. Spread sour cream over the top and customize with additional toppings like lettuce or tomatoes. Serve warm.
