  • 1/2 cup Diced Smoked Bacon Omit for vegetarian option
  • 1 small Yellow Onion A sweet onion can be a lovely alternative
  • 1 clove Garlic Optional

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C).
  2. Press the pie crust into a tart pan, pricking the base with a fork. Bake for 12 minutes, then remove weights and bake for an additional 5 minutes until lightly golden.
  3. In a skillet, cook the diced bacon until crispy (5-7 minutes). Transfer to paper towels. Sauté the onion until translucent, add garlic last minute, then stir in spinach until wilted.
  4. Whisk together the eggs, heavy cream, and whole milk. Stir in seasonings and fold in half of the Gruyère cheese.
  5. Distribute the bacon and sautéed vegetables in the baked crust. Pour the egg mixture over the filling and top with remaining cheese.
  6. Bake for 35-40 minutes until the center is set and internal temperature is 165°F (74°C).
  7. Cool for 10 minutes before slicing and serving warm or at room temperature.

Notes
