Preparation Steps
- Preheat the oven to 375°F (190°C).
- Press the pie crust into a tart pan, pricking the base with a fork. Bake for 12 minutes, then remove weights and bake for an additional 5 minutes until lightly golden.
- In a skillet, cook the diced bacon until crispy (5-7 minutes). Transfer to paper towels. Sauté the onion until translucent, add garlic last minute, then stir in spinach until wilted.
- Whisk together the eggs, heavy cream, and whole milk. Stir in seasonings and fold in half of the Gruyère cheese.
- Distribute the bacon and sautéed vegetables in the baked crust. Pour the egg mixture over the filling and top with remaining cheese.
- Bake for 35-40 minutes until the center is set and internal temperature is 165°F (74°C).
- Cool for 10 minutes before slicing and serving warm or at room temperature.
