Ingredients
  

For the Dough
  • 1 cup Active Sourdough Starter Ensure it is bubbly and active
  • 1 cup Water
  • 4 cups All-Purpose Flour Can substitute with bread flour
  • 1 teaspoon Baking Soda Ensure it's fresh
  • 1 teaspoon Baking Powder Ensure it's fresh
  • 1 teaspoon Salt
  • 1/2 cup Melted Butter Can use unsalted butter
  • 1/4 cup Maple Syrup Honey can be a substitute
  • 2 large Eggs
For the Filling
  • 1/2 cup Butter (for filling) Use softened butter
  • 1 cup Brown Sugar Can use white sugar
  • 2 tablespoons Ground Cinnamon
For the Topping
  • 8 ounces Cream Cheese Opt for full-fat
  • 1/4 cup Heavy Cream Use whole milk as a lighter alternative
  • 1 cup Confectioner’s Sugar Can use evaporated milk for a thinner consistency
  • 1 teaspoon Vanilla Extract Can substitute with almond extract

Method
 

Dough Preparation
  1. In a stand mixer, combine sourdough starter, water, flour, baking soda, baking powder, salt, melted butter, maple syrup, and eggs. Mix on low speed for about 10 minutes until smooth.
  2. Transfer dough to a greased bowl, cover, and let rise overnight in a warm area.
Filling Preparation
  1. Mix softened butter, brown sugar, and cinnamon until creamy.
Rolling and Cutting
  1. Flour a surface, punch down the dough, roll into a rectangle, spread filling, and slice into 12 equal pieces.
Second Rise and Baking
  1. Place slices in a greased baking dish, let rise for 30-60 minutes, then bake at 350°F for 20-25 minutes.
Topping Preparation
  1. Whip cream cheese, heavy cream, confectioner’s sugar, and vanilla until smooth, and spread over the cooled rolls.
Serving
  1. Sprinkle with cinnamon and enjoy warm.
