  • 1/2 cup Sweetened Condensed Milk
For the Topping
  • 1 container Vanilla Frosting Cream cheese frosting can be used for a tangy twist.
  • 8 oz Mascarpone Cheese Can be replaced with cream cheese with added heavy cream.
  • 1 oz Unsweetened Chocolate For garnish, can be omitted or replaced with cocoa powder.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and spray the baking dish with nonstick cooking spray.
  2. In a large mixing bowl, combine the cake mix, water, vegetable oil, and egg whites, and beat for about 2 minutes until smooth.
  3. Pour the batter into the baking dish and bake for 29-34 minutes until a toothpick comes out clean.
  4. Whisk together the cold brew coffee and sweetened condensed milk in a medium bowl and set aside.
  5. Once the cake is baked, poke holes with a wooden spoon handle about every 1½ inches apart.
  6. Slowly pour the coffee syrup evenly over the warm cake and let it soak in.
  7. Cover the cake and refrigerate for 30 minutes to 1 hour.
  8. In a medium bowl, whip the mascarpone cheese until smooth, then mix in the vanilla frosting until blended.
  9. Spread the mascarpone mixture evenly over the top of the cooled cake.
  10. Garnish with grated unsweetened chocolate, slice, and serve.
