Step-by-Step Instructions
- In a food processor, add the room temperature unsalted butter, icing sugar, all-purpose flour, sea salt, and Earl Grey tea leaves along with the Earl Grey extract. Pulse until the mixture transforms into a coherent dough, roughly 1-2 minutes.
- Once your dough for the Earl Grey Shortbread Cookies is ready, turn it out onto a clean surface. Divide the dough into two equal portions and roll each into a log about 1.5 to 2 inches in diameter. Wrap the logs tightly in plastic wrap and refrigerate for at least 1 hour.
- After chilling, preheat your oven to 350°F (175°C). Remove the chilled dough logs from the refrigerator and unwrap them. Slice the logs into ¼ to ½ inch thick cookies, arrange them on a parchment-lined baking sheet.
- Place the baking sheet with your sliced Earl Grey Shortbread Cookies in the preheated oven. Bake for approximately 10 minutes or until the edges are just lightly golden.

Notes
Chill the dough to prevent it from flattening during baking. Experiment with flavors like lavender and citrus zest to enhance your cookies.
