- Preheat your oven to 350°F (177°C) and prepare an 8x8 inch baking pan with parchment paper or nonstick spray.
- In a medium-sized mixing bowl, whisk together the flour, baking powder, cinnamon, and salt.
- In a larger bowl, combine melted butter and brown sugar; mix until well incorporated. Add egg and vanilla extract and whisk until smooth.
- Gently incorporate the dry ingredients into the wet mixture using a spatula until just combined.
- Fold in the rolled oats and chocolate chips and any optional mix-ins.
