Filling Ingredients
  • 2 cups Fresh or Frozen Rhubarb Frozen rhubarb should not be thawed before use

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine all-purpose flour, oats, brown sugar, cinnamon, baking powder, and salt.
  3. Pour in melted butter and mix until it resembles damp sand.
  4. Press two-thirds of the crumb mixture into the bottom of the prepared baking pan and bake for 10 minutes.
  5. In a separate bowl, toss rhubarb, sugar, cornstarch, orange juice, and zest until well coated.
  6. Spread the rhubarb filling over the warm crust and crumble the remaining oat mixture on top.
  7. Bake for an additional 30 to 40 minutes until golden brown and bubbly.
  8. Allow to cool in the pan for about 15 minutes before transferring to chill, then slice and serve.
