Baking Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking pan with parchment paper.
- In a large mixing bowl, combine all-purpose flour, oats, brown sugar, cinnamon, baking powder, and salt.
- Pour in melted butter and mix until it resembles damp sand.
- Press two-thirds of the crumb mixture into the bottom of the prepared baking pan and bake for 10 minutes.
- In a separate bowl, toss rhubarb, sugar, cornstarch, orange juice, and zest until well coated.
- Spread the rhubarb filling over the warm crust and crumble the remaining oat mixture on top.
- Bake for an additional 30 to 40 minutes until golden brown and bubbly.
- Allow to cool in the pan for about 15 minutes before transferring to chill, then slice and serve.
