- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press this mixture firmly into the bottom of your springform pan.
- Bake the crust in the preheated oven for 10 minutes.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla, mixing until fully combined.
- Add the eggs one at a time, blending well after each addition. Stir in sour cream, flour, and salt until just combined.
- Pour the cream cheese filling over the pre-baked crust.
- Place the springform pan in the oven and bake for 50-60 minutes.
- Turn off the oven and crack the door open, allowing cheesecake to cool for 1 hour.
- Transfer to the refrigerator and chill for at least 4 hours.
- Run a knife around the edge of the springform before releasing the sides. Slice and serve.
