Instructions
- Preheat your oven to 350°F (175°C). Gather your ingredients and cooking equipment.
- Melt butter in a large skillet and sauté sliced yellow onions for about 20 minutes until caramelized.
- Add chopped fresh mushrooms to the skillet and cook for approximately 15 minutes. Add minced garlic and season with salt and pepper, cooking for an additional 1-2 minutes.
- Stir in the cream cheese and grated Parmesan or Cotija cheese. Cook until cheese melts, about 3-5 minutes.
- Roll out puff pastry on a floured surface and form two rectangles about 1/4 inch thick. Seal seams if necessary.
- Slice puff pastry into 12 squares and press each square into the bottoms of 24 mini muffin cups.
- Spoon the mushroom and cheese mixture evenly into each pastry cup.
- Bake for about 10-15 minutes until the pastry is golden brown and puffed up.
- Allow to cool slightly in the tray for about 5 minutes before serving warm.
