For the Pastry
  • 1 sheet Puff Pastry Can substitute with phyllo dough.
  • 1 tablespoon Parsley Can substitute with chives or thyme.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and cooking equipment.
  2. Melt butter in a large skillet and sauté sliced yellow onions for about 20 minutes until caramelized.
  3. Add chopped fresh mushrooms to the skillet and cook for approximately 15 minutes. Add minced garlic and season with salt and pepper, cooking for an additional 1-2 minutes.
  4. Stir in the cream cheese and grated Parmesan or Cotija cheese. Cook until cheese melts, about 3-5 minutes.
  5. Roll out puff pastry on a floured surface and form two rectangles about 1/4 inch thick. Seal seams if necessary.
  6. Slice puff pastry into 12 squares and press each square into the bottoms of 24 mini muffin cups.
  7. Spoon the mushroom and cheese mixture evenly into each pastry cup.
  8. Bake for about 10-15 minutes until the pastry is golden brown and puffed up.
  9. Allow to cool slightly in the tray for about 5 minutes before serving warm.
