  • 1 tablespoon Fresh Ginger or 1 tsp ground ginger
  • 3 cloves Garlic or 1/4 tsp garlic powder
  • 1 cup Vinegar white or balsamic, apple cider vinegar for sweeter hint
  • 1/2 cup Sugar brown sugar for caramel notes or white for cleaner taste
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Cayenne Pepper or chili powder, adjust for desired heat
  • 1 whole Cinnamon Stick remove before storing

Method
 

Step-by-Step Instructions
  1. Preheat a medium-sized saucepan over medium heat for about 2 minutes. Add a splash of oil to coat the bottom.
  2. Add chopped onions, minced garlic, and freshly grated ginger. Sauté for 5-7 minutes until onions are translucent and soft.
  3. Stir in chopped dried apricots, vinegar, sugar, and spices (ground cinnamon, cayenne pepper, and whole cinnamon stick). Mix well to coat the apricots.
  4. Bring the mixture to a gentle boil, then reduce the heat to low and allow to simmer uncovered for about 1.5 hours, stirring occasionally.
  5. Taste and adjust seasoning, adding more salt or sugar as needed. Remove from heat once taste is perfected.
  6. Spoon hot chutney into pre-sterilized jars, filling them to about ¾ full and seal tightly.
  7. Allow jars to cool completely at room temperature. Store in a cool, dark place.
