- Preheat a medium-sized saucepan over medium heat for about 2 minutes. Add a splash of oil to coat the bottom.
- Add chopped onions, minced garlic, and freshly grated ginger. Sauté for 5-7 minutes until onions are translucent and soft.
- Stir in chopped dried apricots, vinegar, sugar, and spices (ground cinnamon, cayenne pepper, and whole cinnamon stick). Mix well to coat the apricots.
- Bring the mixture to a gentle boil, then reduce the heat to low and allow to simmer uncovered for about 1.5 hours, stirring occasionally.
- Taste and adjust seasoning, adding more salt or sugar as needed. Remove from heat once taste is perfected.
- Spoon hot chutney into pre-sterilized jars, filling them to about ¾ full and seal tightly.
- Allow jars to cool completely at room temperature. Store in a cool, dark place.
