Step-by-Step Instructions
  1. Gather all your ingredients. Preheat oven to 350°F (175°C) and line baking trays with parchment paper.
  2. In a large mixing bowl, beat the eggs and sugar together until light and fluffy. Stir in melted butter and vanilla extract until combined.
  3. Sift flour, baking powder, and salt into the wet mixture. Add milk gradually until a soft dough forms.
  4. Scoop small amounts of dough and roll them into balls the size of golf balls. Place on baking trays.
  5. Bake for about 12 minutes until lightly golden. Cool and then hollow out centers.
  6. Fill each hollowed cookie with peach jam and sandwich two cookies together.
  7. Dip in milk tinted with red food coloring and roll in granulated sugar.
  8. Garnish each cookie with a mint leaf and cool completely before serving.
