  1. In a medium bowl, whisk together ¼ cup of olive oil, 2 tablespoons of balsamic vinegar, and a pinch of salt and pepper.
  2. Just before serving, dice 1 large English cucumber, 1 cup of cherry tomatoes, and ¼ of a red onion. Pat the diced vegetables dry.
  3. Add the diced cucumber, tomatoes, and onion to the bowl containing the dressing and toss them in.
  4. Gently toss the salad ingredients with a pair of salad tongs until everything is well-coated with the dressing.
  5. Allow the salad to rest at room temperature for about 10-15 minutes before serving.
