- In a large mixing bowl, combine ground pork, jerk seasoning, minced garlic, chopped scallions, ginger, salt, and pepper. Mix thoroughly until well combined.
- Shape the mixture into bite-sized meatballs, about 1 to 1.5 inches in diameter.
- Heat vegetable oil in a large skillet over medium-high heat. Brown the meatballs for 8-10 minutes, turning occasionally.
- In the same skillet, lower the heat to medium and add coconut milk. Whisk in curry powder and bring to a gentle simmer.
- Return the browned meatballs to the skillet with the simmering coconut curry sauce and stir to coat.
- Cover the skillet and let them simmer for 10-15 minutes until the meatballs are cooked through.
- Taste the sauce and adjust seasoning with more salt or pepper if needed. Stir well and let rest before serving.
