- Zest two medium lemons and chop them coarsely. Place them inside the chicken cavity with rosemary.
- Truss the chicken by tying the legs together with kitchen string for even cooking.
- Place the trussed chicken on a rack in a shallow roasting pan. Brush skin generously with olive oil.
- Combine minced rosemary, coarsely ground pepper, salt, and reserved lemon zest. Rub the mixture all over the chicken.
- Roast the chicken uncovered for 2-2½ hours, occasionally basting. Check internal temperature is 170°F (77°C).
- Let the chicken rest for 15 minutes before carving to allow juices to redistribute. Discard lemons and rosemary.
