Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your workspace.
  2. Zest two medium lemons and chop them coarsely. Place them inside the chicken cavity with rosemary.
  3. Truss the chicken by tying the legs together with kitchen string for even cooking.
  4. Place the trussed chicken on a rack in a shallow roasting pan. Brush skin generously with olive oil.
  5. Combine minced rosemary, coarsely ground pepper, salt, and reserved lemon zest. Rub the mixture all over the chicken.
  6. Roast the chicken uncovered for 2-2½ hours, occasionally basting. Check internal temperature is 170°F (77°C).
  7. Let the chicken rest for 15 minutes before carving to allow juices to redistribute. Discard lemons and rosemary.
