Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar for about 3 minutes until light and fluffy.
  3. Add the honey, egg, and vanilla extract to the mixture and beat until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Fold in the dried lavender flowers and chopped nuts.
  7. Scoop tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Sprinkle additional sugar and lavender flowers on the dough before baking.
  9. Bake for 12-15 minutes until edges are lightly golden and cool for 5 minutes.
  10. Transfer cookies to a rack to cool completely.
