Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Cut medium potatoes into quarters and arrange on a sheet pan.
  3. In a bowl, mix olive oil, lemon juice, Italian seasoning, smoked paprika, lemon zest, garlic powder, salt, and pepper to create a marinade.
  4. Place chicken leg quarters on the sheet pan and coat with the marinade, tossing potatoes to coat as well.
  5. Arrange thin lemon slices on top of chicken leg quarters.
  6. Bake for 40–45 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  7. Optional: Switch to broil for the last few minutes for extra crispiness.
  8. Remove from oven and let the chicken rest for 5-10 minutes before serving.
