- Preheat your oven to 425°F (220°C).
- Toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread seasoned baby potatoes on a baking sheet and roast for 20 minutes.
- After 20 minutes, toss broccoli with olive oil, salt, and pepper; add to the baking sheet.
- Return the baking sheet to the oven and roast for an additional 15-20 minutes.
- Melt unsalted butter in a skillet over medium heat; add minced garlic and sauté for 1 minute.
- Stir in fresh lemon juice, salt, and pepper to create the lemon butter sauce.
- Add salmon fillets skin-side down to the skillet; cook for 4-5 minutes.
- Flip the salmon and cook for an additional 3-4 minutes until cooked through.
- Plate crispy potatoes and roasted broccoli with the salmon; drizzle with lemon butter sauce and garnish.
