Ingredients
  

For the Salmon
  • 4 fillets Salmon Thawed if frozen
  • 1/2 cup Unsalted butter Can substitute with olive oil
  • 1/4 cup Fresh lemon juice
  • 2 cloves Garlic Minced; fresh preferred
  • 1 tsp Salt
  • 1/2 tsp Pepper
For the Vegetables
  • 1 lb Baby potatoes Can substitute with golden or red potatoes
  • 2 cups Broccoli florets Can substitute with asparagus or green beans
  • 2 tbsp Olive oil For roasting
  • 1 tsp Garlic powder Optional but recommended
  • 1 tsp Paprika
For Garnishing
  • 1 slices Lemon For serving
  • 1/4 cup Fresh parsley Chopped, for garnish
  • Lemon zest Optional

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread seasoned baby potatoes on a baking sheet and roast for 20 minutes.
  4. After 20 minutes, toss broccoli with olive oil, salt, and pepper; add to the baking sheet.
  5. Return the baking sheet to the oven and roast for an additional 15-20 minutes.
  6. Melt unsalted butter in a skillet over medium heat; add minced garlic and sauté for 1 minute.
  7. Stir in fresh lemon juice, salt, and pepper to create the lemon butter sauce.
  8. Add salmon fillets skin-side down to the skillet; cook for 4-5 minutes.
  9. Flip the salmon and cook for an additional 3-4 minutes until cooked through.
  10. Plate crispy potatoes and roasted broccoli with the salmon; drizzle with lemon butter sauce and garnish.

Notes
