Ingredients
  

For the Syrup
  • 1 cup Water
  • 1/2 cup Granulated Sugar Can be substituted with honey or agave syrup
  • 1-2 stalks Lemongrass Chopped, reserved pieces for garnish
  • A handful Fresh Basil Can be swapped with mint
For the Drink
  • 1 cup Fresh Lime Juice Fresh is recommended
  • 2 cups Sparkling Soda Club soda or flavored sparkling water can be used
  • Crushed Ice Use crushed for texture

Method
 

Preparation Steps
  1. Trim the ends of the lemongrass stalks, peel away tough layers, and chop to ½ cup.
  2. Combine chopped lemongrass, water, sugar, and basil in a saucepan. Bring to boil, then simmer for 5-7 minutes.
  3. Remove from heat and cool for a few minutes, then strain the syrup and refrigerate for 15 minutes.
  4. Divide the cooled syrup between two glasses, add lime juice, and fill with sparkling soda.
  5. Garnish each glass with basil, a lemongrass stalk, and a lime wedge. Serve immediately over crushed ice.
