- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the fresh cauliflower into uniform florets. Toss them in a bowl with melted butter or oil, adding salt and pepper.
- Spread the seasoned cauliflower on the prepared baking sheet and roast in the oven for 20-25 minutes, stirring halfway through.
- In a mixing bowl, combine sour cream, cream cheese, shredded cheddar cheese, Parmesan, minced garlic, and seasonings.
- Once the cauliflower is finished roasting, transfer to a large mixing bowl and pour the cheese mixture over it, gently folding to coat.
- Grease a casserole dish with butter and pour the cauliflower and cheese mixture into it, spreading evenly.
- Sprinkle the remaining cheddar cheese and crumbled bacon over the top.
- Reduce the oven temperature to 375°F (190°C) and bake for 15-20 minutes until bubbly and golden brown.
- Let cool slightly, garnish with freshly chopped chives or green onions, and serve warm.
