Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the fresh cauliflower into uniform florets. Toss them in a bowl with melted butter or oil, adding salt and pepper.
  3. Spread the seasoned cauliflower on the prepared baking sheet and roast in the oven for 20-25 minutes, stirring halfway through.
  4. In a mixing bowl, combine sour cream, cream cheese, shredded cheddar cheese, Parmesan, minced garlic, and seasonings.
  5. Once the cauliflower is finished roasting, transfer to a large mixing bowl and pour the cheese mixture over it, gently folding to coat.
  6. Grease a casserole dish with butter and pour the cauliflower and cheese mixture into it, spreading evenly.
  7. Sprinkle the remaining cheddar cheese and crumbled bacon over the top.
  8. Reduce the oven temperature to 375°F (190°C) and bake for 15-20 minutes until bubbly and golden brown.
  9. Let cool slightly, garnish with freshly chopped chives or green onions, and serve warm.
