- Soak the chopped apricots in brandy overnight to infuse flavor.
- Preheat the oven to 160ºC/Fan 140º/Gas 3 and prepare the traybake tin.
- Cream the butter and light brown sugar until smooth and light in color.
- Gently stir in the soaked apricots, eggs, flour, raisins, currants, and cherries until well combined.
- Transfer the mixture into the prepared tin and level the surface.
- Bake for 1–1¼ hours until golden brown and a skewer comes out clean.
- Brush the top with apricot jam, cover with almond paste, and then with white icing.
- Cut into squares and arrange for serving.
