  • 200 g Plain Flour A gluten-free blend can be used as an alternative.

  • 100 g Currants Can substitute with sultanas if unavailable.

For the Glaze and Decoration
  • 50 g Apricot Jam Raspberry jam can be used for a tart alternative.
  • 250 g Almond Paste (Marzipan) Can be replaced with a similar nut paste.
  • 250 g Ready-to-roll White Icing Alternatively, use fondant or chocolate ganache.

Method
 

Step-by-Step Instructions
  1. Soak the chopped apricots in brandy overnight to infuse flavor.
  2. Preheat the oven to 160ºC/Fan 140º/Gas 3 and prepare the traybake tin.
  3. Cream the butter and light brown sugar until smooth and light in color.
  4. Gently stir in the soaked apricots, eggs, flour, raisins, currants, and cherries until well combined.
  5. Transfer the mixture into the prepared tin and level the surface.
  6. Bake for 1–1¼ hours until golden brown and a skewer comes out clean.
  7. Brush the top with apricot jam, cover with almond paste, and then with white icing.
  8. Cut into squares and arrange for serving.
