Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Dice the red bell pepper, slice the red onion, mince the garlic, and halve the ripe tomatoes.
  3. In a small bowl, combine oregano, thyme, salt, black pepper, and optional red pepper flakes.
  4. Distribute the diced vegetables and crumbled feta evenly in oven-safe dishes, drizzling with olive oil.
  5. Bake for 25 minutes until softened and golden.
  6. Stir the roasted vegetables and melted feta together, then add spinach and create wells for the eggs.
  7. Crack large eggs into the wells and sprinkle with lemon zest.
  8. Return to the oven and bake for an additional 8-10 minutes.
  9. Let rest for a few minutes and garnish with fresh basil before serving.
