Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium-high heat until shimmering. Add ground beef, stirring occasionally for 5 to 7 minutes until browned. Drain excess fat.
  2. Stir in tomato paste and Mexican seasoning, followed by a splash of water. Mix well and let simmer for 3 to 5 minutes until thickened.
  3. In a food processor, combine avocado, sour cream, lime juice, cilantro, and minced garlic. Blend until smooth. Adjust seasoning with salt and pepper.
  4. Lightly toast tortillas in a skillet for 15-30 seconds until warm and pliable. Keep wrapped to maintain warmth.
