- Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with foil or parchment paper.
- In a medium bowl, whisk together the miso paste, brown sugar, soy sauce, sesame oil, and mirin until smooth.
- Place the salmon fillets skin-side down on the baking sheet and coat each fillet with the miso glaze, reserving some for later.
- Bake the salmon for 6-8 minutes until it flakes easily but is not overcooked.
- Switch the oven to broil, brush remaining miso glaze on the salmon, and broil for an additional 4-6 minutes until caramelized.
- Check the salmon for doneness, aiming for an internal temperature of 120–125°F for medium.
