  • 2 fillets Salmon Fillets fresh, skin-on fillets
For the Miso Glaze
  • 3 tablespoons Miso Paste red miso preferred
  • 2 tablespoons Brown Sugar can substitute with honey or maple syrup
  • 2 tablespoons Soy Sauce preferably low-sodium
  • 1 tablespoon Sesame Oil can substitute with light oil
  • 1 tablespoon Mirin can substitute with rice vinegar and sugar
For Garnishing
  • 1 tablespoon Toasted Sesame Seeds for garnish
  • 2 tablespoons Chopped Green Onion for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with foil or parchment paper.
  2. In a medium bowl, whisk together the miso paste, brown sugar, soy sauce, sesame oil, and mirin until smooth.
  3. Place the salmon fillets skin-side down on the baking sheet and coat each fillet with the miso glaze, reserving some for later.
  4. Bake the salmon for 6-8 minutes until it flakes easily but is not overcooked.
  5. Switch the oven to broil, brush remaining miso glaze on the salmon, and broil for an additional 4-6 minutes until caramelized.
  6. Check the salmon for doneness, aiming for an internal temperature of 120–125°F for medium.
