For the Streusel Topping
  • 1/2 cup Cubed Cold Butter or substitute with margarine
  • 1 cup All-Purpose Flour use the same flour type as for the cake
  • 1/2 cup Granulated Sugar can swap with brown sugar
  • 1 teaspoon Ground Cinnamon for flavor
For the Glaze
  • 1 cup Powdered Sugar or substitute with icing sugar
  • 2 tablespoons Butter or substitute with a dairy-free spread
  • 2 tablespoons Heavy Cream can replace with evaporated milk or non-dairy alternative
  • 1 teaspoon Vanilla Extract or use vanilla bean paste

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch cake pan.

  3. In a large bowl, blend pumpkin, granulated sugar, oil, and eggs until smooth using a hand mixer.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Gradually add to the pumpkin mixture until just combined.
  5. Pour batter into the prepared pan and sprinkle the streusel topping evenly over the batter.
  6. Bake for 30-38 minutes or until a toothpick inserted comes out clean and edges are golden.
