  • 1 cup Long Grain White Rice Brown rice can substitute with adjusted cooking time.
  • 1 medium Zucchini Brings moisture; yellow squash works well.
  • 2 cups Chicken Broth Vegetable broth can be used for vegetarian option.

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9 x 13-inch baking dish with olive oil.
  2. Combine diced chicken, lemon juice, and olive oil in the greased baking dish. Add parsley, oregano, thyme, smoked paprika, seasoned salt, cumin, onion powder, garlic powder, black pepper, turmeric, and cayenne pepper. Toss to coat and marinate for 30 minutes.
  3. Add uncooked rice and grated zucchini to the dish. Pour in chicken broth and mix thoroughly.
  4. Cover tightly with aluminum foil and bake for approximately 40 minutes.
  5. Uncover and check if the rice is tender. If crunchy, cover and return to oven for an additional 5 to 10 minutes.
  6. Fluff the rice with a fork, mixing it with the chicken, and season with extra salt and pepper as desired. Serve with tzatziki, fresh herbs, and lemon wedges.
