Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with foil. Lightly grease the foil with cooking spray or olive oil.
  2. Using chopsticks or wooden spoon handles as guides, carefully slice each potato into thin sections about ¼ inch apart, stopping 1/3 inch from the bottom.
  3. Arrange the sliced potatoes on the greased baking sheet. Brush olive oil between and on top of the potatoes. Bake for 50-60 minutes, until tender and crispy.
  4. Melt unsalted butter in a small saucepan over low heat. Combine with minced garlic, a splash of olive oil, fresh herbs, salt, and pepper.
  5. Drizzle the garlic herb butter mixture over the potatoes and sprinkle with Parmesan cheese. Bake for an additional 15-20 minutes.
  6. Remove from the oven and brush with remaining butter. Sprinkle fresh parsley on top and serve immediately.
