- Preheat your oven to 425°F (220°C) and line a baking sheet with foil. Lightly grease the foil with cooking spray or olive oil.
- Using chopsticks or wooden spoon handles as guides, carefully slice each potato into thin sections about ¼ inch apart, stopping 1/3 inch from the bottom.
- Arrange the sliced potatoes on the greased baking sheet. Brush olive oil between and on top of the potatoes. Bake for 50-60 minutes, until tender and crispy.
- Melt unsalted butter in a small saucepan over low heat. Combine with minced garlic, a splash of olive oil, fresh herbs, salt, and pepper.
- Drizzle the garlic herb butter mixture over the potatoes and sprinkle with Parmesan cheese. Bake for an additional 15-20 minutes.
- Remove from the oven and brush with remaining butter. Sprinkle fresh parsley on top and serve immediately.
